2 cups white wine
About 11/2 quarts (6 cups) hot chicken stock
1/2 cup balsamic vinegar
Salt, freshly ground pepper, to taste
2 tablespoons butter
3 tablespoons (or more) goat cheese
1/4 cup toasted walnuts
3 teaspoons chopped chives
Sweat onion, toast barley: Sweat onion in the olive oil in a Dutch oven over low heat for about 5 minutes. Add barley; toast together for 3 minutes.
Cook the risotto: Add white wine, and reduce until dry. Then start adding hot chicken stock, 1 cup at a time, stirring until grain fully absorbs the broth. Continue to add stock, 1 cup at a time and repeating the procedure, until the barley is just tender (al dente), about 30 minutes.
Reduce the vinegar: In a small nonreactive saucepan (such as stainless steel), reduce the balsamic vinegar over medium heat until it reaches a syrupy consistency.

I normally used "white vinegar" this time i used "white wine vinegar" is it ok to clean coffee maker wine vinegar. I ran like 4 pots of water through after wards, anyone think this is ok?
Sure it's ok, vinegar is used for many different cleaning applications, coffee pots among them. As a matter of fact, I think you can use hard cider too, and if it's hard enough you can just drink the cleaning water instead of throwing it out.
